Long story short, the Wifi problem is still a problem, but not critical for me now that I got a Steam Dock to connect the deck to. Since I bought a new monitor/mouse/keyboard anyway for working from home potential, most of the time I can just hook those things up to the Steam Dock and use the deck as a linux computer if I switch it to desktop mode. Or just play games in the big picture mode it boots in normally. 27" monitor is awesome.
The deck plays minecraft past 1.16, and does so a lot better than my main PC even without optifine - which is a required plugin for my main comp. Otherwise I get like 1-2 frames per second when I'm at any place that's got a lot going on, like the Industrial Complex or the nether gold farm.
I installed GIMP on it last night but haven't had the chance to actually try to use it. I'm a bit weary to do so though all the same since I remember having a lot of trouble using it's normal menu options and set up many years back. Just real different from the Paint Shop Pro that I usually use.
